This is extra special cornmeal!  I grow all of the corn used in my  cornmeal on my chemical free farm and it is made with %100 unsprayed open pollinated heirloom variety white Hickory King corn.  This special variety of corn has grown in our area for over 200 years it is a "half flint and half dent" cornmeal which refers to the amount of flour and meal grit texture.  This cornmeal is great for corn bread, mush, polenta, and fish fry.   This is whole kernel corn ground fresh on our mill.  It has nothing added, and nothing removed.  When cooking polenta, use 3 1/2 parts water to 1 part cornmeal plus salt.  Skim off any chaff that floats to top.  Cook minimum of 20 minutes over medium heat, or long slow cook over low heat or crock pot. Add anything you like: milk, honey, peppers, cheese, garlic, etc. Sweet or savory, polenta goes with everything!
UPDATE: .  We had a good yield and now all the corn chips, hominy, cornmeal, grits, hominy grits and seed, (all the corn products) will be made from Organic,Kentucky grown, Hickory King White, Open Pollinated, Non-GMO.
