Our grits are made with non-GMO open-pollinated Hickory King white heirloom corn typically grown by us on our farm, but our most recent harvest has run out! This batch is grown by a small family seed grower in northern Ohio that has been growing Hickory King corn and other open-pollinated varieties for several generations. Once harvested, it is dried, shelled from the cob on an antique shelling machine, and then the whole corn kernels are ground fresh on our mill.
Hickory King corn is a special variety of corn that has grown in our area for over 300 years, and is a "half flint and half dent" cornmeal which refers to the amount of flour and meal grit texture. These grits are good for cheese grits and coarse polenta. Add anything you like: milk, honey, peppers, cheese, garlic, etc. Sweet or savory, grits go with everything!
When cooking grits, use 3 1/2 parts water to 1 part grits plus salt. Skim off any chaff that floats to top. Cook minimum of 20 minutes over medium heat, or long slow cook over low heat or crock pot.
